New research reveals urgent need for gluten-free training in hospitality
New research released ahead of Coeliac Awareness Week (13-20 March) has revealed one-third of hospitality staff have never been offered gluten-free training, despite gluten topping the list as the most requested dietary requirement in Australia.
An estimated 3.1 million Australians (1 in 12) now choose gluten-free options. For many, avoiding gluten is a medical necessity and accidentally consuming foods that contain gluten can have serious health complications.
In support of Coeliac Awareness Week 2020, Nestlé Professional has released the second edition of its gluten-free management resource, Your Practical Guide to Gluten-Free in Food Service. The freely available guide aims to help businesses cater for gluten-free diets and remove key barriers for foodservice providers while encouraging the industry to treat gluten with the same seriousness as other allergens
