Australian cookbook Best in the World

Make It Moroccan (New Holland), the popular Australian cookbook by Hassan M’Souli, has won the prestigious Best In The World Award in the category of ‘African Cuisine’ at the Gourmand World Cookbook Awards in Paris.

The most prestigious awards for cooking titles globally, entries were submitted for consideration in this year’s event from 136 countries.

The owner of Manly’s dining hotspot, Out Of Africa – nominated by the Catering Association as a finalist in Sydney’s Best Restaurant Awards for the past 6 consecutive years – M’Souli is also the author of Moroccan Modern (New Holland).

Conveying the compelling allure of Morocco’s fusion of traditional and modern cultures, filled with rich and enlivening experiences to entice the senses, Make It Moroccan features over 100 new and original recipes, brimming with the distinctive sweet, salty and earthy flavours that make this genre of cuisine so popular.

Hassan, currently in Paris for the awards, credits his mother with his love of all food Moroccan, which he says is as much about a chef’s intuition as it is the traditional recipes and techniques that it is based on. In Make It Moroccan, he divulges some of the secrets that were passed down to him from his mother as well as his own tricks and techniques, finely honed over the years of operating his own restaurant.

This was M’Souli’s first Gourmand Awards nomination.
